Stews tend to be a good place to start if you're looking to refine your culinary skills. They're difficult to overcook and they're a good way to get a hang of seasoning.
Oh I also really like making hayashi rice. It's delicious.
Also falafel.
[member=4]Lightning[/member] : Mac and Cheese always does me in because tfw lactose intolerant and also IBS but it tastes good enough I cannot regret it.
I find the key to taking the cheese sauce to the next level is adding a little bit of dijon to it in addition to some garlic powder and salt and pepper. That little bit of acidity and heat the mustard adds I find tends to really round everything out.
